I asked Alexa to play Mozart's 40th symphony. It plays only the first movement. How do I get her to play the whole thing?

Unless you have Music Unlimited, you may not get the entire symphony.

You could use a different streaming service and maybe get better results. But I have found that Classical Music is best left to manual means if you want to hear it the way it was meant to be played... Almost every streaming service breaks up the recordings and inserts pauses and just generally screws up the whole experience... so listening to Handel I just put the disc on (Yes... I still have a CD player)... or play a specifically recorded piece form my own collection of digital recordings  Most I have, have been recorded now without spaces and pauses... but they do take up some big chunks of memory if you want near audiophile grade recordings. Classical and just about all the streaming services do not play well together.
