Sorry if this has been addressed in other threads, it's hard to search for...
How do you or even can you stop your Echo from being awoken from audio devices such as your TV or phone when watching youtube clips for example?

The only sure way to accomplish this is to press the Mic/Mute button on the top of the Echo.

I could have sworn I heard a while back that they had developed a way of stopping this?

Nope. Every advert for an Alexa device and a chorus of chirps goes off in my house!

have not had that problem anymore. the last few weeks, I have seen several echo commercials and a youtube video and my echo kept quiet. have not watch an episode of castle lately so not sure if it will still activate.

don't know about an update but they were supposed to be tweaking it to make it harder to wake up unintentionally. the superbowl commercial proved it could be done

I'm no software expert but surely they can develop a way of being able to distinguish between a real human voice and an audio device?

They kinda have in that the devices wake but on the whole they don't try to deal with whatever they've heard. They used to and that did lead to some odd 'conversations'!
